Recipe for Mango Cake

Ingredients for the sponge:

  • 4 eggs large, room temperature

  • ¼ cup hot water

  • ¾ cup sugar

  • 2 teaspoons vanilla extract

  • 1 cup all-purpose flour

  • ¼ cup cornstarch

  • 1 teaspoon baking powder

  • 2 tablespoons cooking oil

Ingredients for assembling:

  • 2 Mangoes (cut into cubes)

  • 1/2 cup mango puree

  • 1/2 cup sugar syrup

  • 2 cups of whipping cream

Method:

  1. Oil a spring from the pan's bottom. On the base, spread parchment paper.

  2. Into the mixing bowl, crack eggs. put boiling water in. Whisk yolks for a minute at high speed with a mixer's whisk attachment until foamy.

  3. Add sugar and vanilla essence gradually. 8 to 12 minutes at maximum speed while whisking.

  4. Add the baking powder, cornflour, and flour together. Then, in three portions, sift it into the egg-sugar mixture. Every time, use a spatula to equally fold in the flour and scrape the bottom of the bowl before incorporating the cooking oil.

  5. Bake the cake batter at 350 degrees F for about 25 to 30 minutes after transferring it to the prepared springform plate. Let it cool down.

  6. Cut the sponge and make 3 flat bases and spread sugar syrup on them.

  7. Now place some whipped cream, some puree, and mango chunks. keep repeating and stacking.

  8. Cover the cake with the remaining whipping cream and decorate it using mango puree and mango chunks.
