Persian Famous Koobideh

Kabob Ingredients

  • Ground beef or lamb or combination

  • Salt

  • Pepper

  • Garlic

  • Onion

  • Paprika

  • Turmeric

Rice Ingredients

  • Boiled water

  • Saffron

  • Salt

  • Oil

Instructions:

  1. Combine the ingredients such as salt, pepper, turmeric, 3-4 garlic cloves and paprika.

  2. Combine one egg only if it's not sticky.

  3. Peel 2 onions and grade them into a fine mesh strainer.

  4. Add the onion to the beef and mix it all up.

  5. Preheat your grill to medium heat and oil the grill.

  6. Shape the Koobideh on your skewer into a long-shaped kabob.

  7. Cook on the grill by rotating the sides when it gets hard. (about 20-25 minutes).

Rice:

  1. Boil Basmati rice into a pot.

  2. Drain your rice

  3. Add oil, half a teaspoon of saffron, and salt in a separate small pot.

  4. Once that comes to a boil, you can take your cooked rice (2 cups of it) in another pot and mix it with the saffron you just made.

  5. Once both your rice steams for about 10-15 min, add the saffron rice as a stripe on top of the white rice.
